Niepoort Telmo Rodrigues is a highly regarded Spanish winemaker and producer with extensive experience across various Spanish regions. His keen interest in the Douro, coupled with Niepoort’s willingness to experiment with different vinification techniques on diverse terroirs, gave rise to the Omlet. The wine comes from old vines over 60 years old, planted at higher altitudes and facing east, which typically mature more slowly and balancedly. Its primary grapes are Touriga Franca and Tinta Roriz, with some Sousão and Alicante Bouschet also present. The goal was to capture Telmo’s vision of winemaking without heavy extraction, yielding a wine with a clean, unobtrusive character. **Vinification:** Fermentation took place in a wooden vat with full degassing, followed by a 25‑day maceration without extraction. The wine aged for 18 months in 228 L French oak barrels and in 2000 L used barrels. **Food pairing suggestion:** Iberian pork, Maronesa beef, wild boar.
