Normally the darling of growers and the headache of winemakers, in Ventozelo it turned out to be entirely different—friendly both in the vineyard and in the bottle, it brought only pleasant surprises. An intense wine, a blend of flavours and sensations that stays with you. The grapes were received on a special line, disgorged completely, manually selected for bunches and then “bago a bago” through an optical sorter. Vinification occurred in a press, with pre‑ and post‑fermentative maceration and dynamic temperature control, followed by 12‑18 months of partial ageing in used French oak barrels. It pairs wonderfully with a medium‑intensity cheese starter or a meal of fatty fish or meat.
