This Alfrocheiro from Dão is a seriously meticulous wine – you can tell from the hand-harvesting. It undergoes a cool pre-fermentation maceration to really coax out its character, followed by precise fermentation and then a patient aging in French oak. The result is a remarkably elegant wine with a lovely acidity, perfect alongside roasted poultry or, dare I say it, a creamy sheep’s cheese.
