The vines here are found on plots with unique characteristics, at higher elevations, from which this whistle originates. SOIL GEOLOGY Soils are loamy and granitic. AVERAGE AGE OF THE VINES 15 to 20 years. VINIFICATION / STAGE Manual harvest, selection table, pneumatic pressing, controlled‑temperature alcoholic fermentation (12º‑14ºC).
