This rosé from Quinta Seara D’Ordens Mater is a deliciously mischievous little number – aged in used oak to add a rebellious streak. The fermentation, carefully conducted in stainless steel, is just the overture to a gentle stirring (batonnage) that really wakes up the lees, surprising us with a freshness. The nose is all sun-drenched picnics with intense fruit, while the palate offers a velvety texture, finishing with a tenacity that belies its light character. Seriously, it's fantastic with fresh oysters or grilled fish.
