This “Sem Fim” from the Douro certainly appears to have been cultivated with a rather fervent dedication – almost an obsession – to the lees. The winemaking, featuring batonnages and a lengthy lees aging, clearly aims to coax out every subtlety from the Gouveio and Viosinho grapes. Gentle pressing, coupled with careful crushing, ensures the integrity of these prized varieties. It’s a remarkably fresh wine, ideal for pairing with grilled fish and a squeeze of lemon, a testament to the careful fermentation in stainless steel, precisely controlled to retain that vibrant Arinto character.
