This Sidónio de Sousa Baga has clearly been on a journey of self-discovery. Following a “non-linear” crush, the wine underwent a “pellicular” maceration on open Lagares, accompanied by manual foot treading that, it seems, wasn’t shy about extracting every ounce of Baga character. After eight years aging in French oak barrels, the result is a wine with remarkably well-defined acidity and tannins, yet possessing a surprising smoothness hinting at remarkable maturity. A must-try for Baga aficionados seeking a classic expression, ideally paired with a grilled beef steak, perhaps with a hint of spice.
