Soalheiro O Soalheiro 9% is an Alvarinho with a different sweetness than the classic concept, and it clearly shows that low-alcohol wines can have the same character and elegance as high-alcohol wines. With residual sugar and lively acidity, Soalheiro 9% expresses the potential of the territory to produce naturally sweet wines, without the need for excessive grape ripening, where the essential characteristics of Alvarinho, such as fruit and youth, are not lost. Soalheiro 9% was inspired by Mosel Riesling in Germany, while maintaining the unmistakable touch of Monção and Melgaço Alvarinho. **TERROIR** The Alvarinho grapes used in Soalheiro 9% come from small plots located at an altitude between 100 and 200 metres, on granite soils. They are protected by a mountain range that creates a very particular microclimate in the Monção and Melgaço region, providing the perfect conditions of rainfall, temperature and hours of sunshine needed for optimal ripening of Alvarinho grapes. **VINIFICAÇÃO** The Alvarinho grapes were hand‑picked fresh and without over‑ripening because Soalheiro 9% is not a late‑harvest wine. The must, obtained by pressing whole grapes, was decanted and fermented at low temperature. Fermentation took place in stainless steel, but was not completed. This gives the wine a precise balance between sweetness and acidity and a low final alcohol content. **SUGGESTION FOR COOKING** Naturally, this wine is excellent at the end of a meal, alone or with dessert. The balance between acidity and residual sugar means this wine shines especially with richer flavours, such as foie gras or a strong, salty cheese.
