Each bottle of Tarelo tells a story of tradition, dedication and passion, conveyed through the unique flavours and aromas of Azores wines; that distinctive terroir that makes Pico wines so special, where every parcel of land is ruled by basalt, the vines planted among stones and protected from the sea’s fury by walls (currais) built manually, stone upon stone. Signed by winemaker Paulo Laureano, and produced in limited quantities, Tarelo – a word in the Azores that means “Judgment” – is ideal for lovers of terroir‑driven wines. Vinification: After the harvest, the grapes were cooled in a cold room to reduce the risk of oxidation and preserve aromatic components. The must was clarified by low‑temperature static decantation, and fermentation took place in stainless‑steel tanks at 15 °C for 15 days. The wine then underwent sur‑lie ageing for four months, followed by eight months in barrels before bottling. Delicious with lapas, oysters, clam chunks, mussels or scallops.
