This Termes certainly seems to have enjoyed a rather pampered upbringing – 14 months in French oak with lees, followed by a 25-day maceration that really allowed the fruit to fully concentrate its potential. The meticulous fermentation at 28°C has resulted in a deep ruby colour, showcasing notes of ripe red berries, wild flowers, and a hint of dark chocolate – perfect alongside some creamy sheep’s cheese, I’d imagine. It’s a remarkably smooth wine, inviting a leisurely tasting to truly appreciate its layered complexity.
