Soalheiro Terramatter is a wine that is entirely different from the other wines of the Soalheiro family. On the one hand, it is a return to its origins and, on the other, a projection into the future. Produced with minimal intervention in both viticulture and winemaking, Terramatter is the genuine expression of our terroir. With an intense colour, expressive aroma and complex palate, this wine reveals a strong personality and a very distinctive profile, to which the early harvest and partial malolactic fermentation in chestnut barrels contribute greatly. Winemaking: After manual harvesting, the Alvarinho grapes undergo three distinct production processes. One portion ferments in stainless steel tanks. Another undergoes both alcoholic and malolactic fermentation in traditional chestnut wood barrels typical of the Minho region. The third portion ferments in concrete eggs, where natural bâtonnage is then carried out. The final blend combines the wines from each of these three parts to create Soalheiro Terramatter, which is then bottled unfiltered. We recommend gently swirling the bottle before serving to thoroughly homogenise the fine lees, allowing for a completely different drinking experience! The lees ageing and its pronounced acidity make Terramatter a bold wine that is best enjoyed with food. We suggest pairing it with oily fish, cooked shellfish, smoked meats, lamb, turkey or roasted vegetables. It pairs very well with dishes featuring cream sauces or mushrooms.
