Vinha Paz demonstrates excellent balance, fresh red fruit with educated tannins, high character and personality. It is a wine with well‑integrated structure, expressing intense and very persistent notes, promising good aging potential. In 2002 the first Vinha Paz was born, its name inspired by the mother of producer António Canto Moniz. Vinha Paz is more than a wine; it is a family legacy spanning over a century, passed down through generations. The vines, aged between 23 and 40 years, grow on the north‑facing slope of the Dão, six kilometres from Viseu, on granite soil, exposed NNE, planted at 440 metres above sea level at Quinta da Leira and Tremoa. Vinification: the varieties were vinified separately to allow the selection of the highest quality lots. The harvest is manual, with the best grapes transported in 22‑kg perforated crates. After total destemming, the grapes fermented in a 4,500‑kg stainless‑steel tank for 10 days at 26 °C. Following the end of alcoholic fermentation, the wine underwent malolactic fermentation, which progressed slowly over four months. Aging: 12 months in French oak barrels ranging from 225 to 500 litres, using barrels 1 to 10 years old.
