This Sauvignon Blanc from Quinta do Rol is a demanding fellow – it certainly doesn’t do things by halves. Gentle pressing combined with cold-soak maceration ensures a remarkably pure expression of aromas. The careful fermentation at 15°C, coupled with weekly lees stirring in French oak barrels (where 9% of the wine matured for 18 months), contributes a sophisticated elegance and a lingering finish, ideally paired with grilled fish and a squeeze of lemon.
