Portugal's most widely planted white grape, Fernão Pires (called Maria Gomes in Bairrada) is a fragrant, early-ripening variety that produces aromatic wines with notes of citrus, white peach and floral muscat-like character. In Bairrada it is the base of the region's celebrated traditional-method sparkling wines; in the Tejo and Lisboa it makes everyday whites and rosés. Skilled producers manage its tendency to lose acidity in heat to make serious, food-friendly still and sparkling wines.
