Enologist Gottfried Mocke prioritizes texture and aroma over pure fruit exuberance, skillfully extracting a vibrant and youthful expression from the Hemel-en-Aarde terroir. Fermentation occurs spontaneously in concrete, complemented by gentle lees stirring (batonnage), which amplifies the wine’s complexity.
