This Crasto DOC appears to have been remarkably meticulous – almost as if anticipating a siege. The obsessive grape selection, rigorous temperature control (8°C for 48 hours!), and overall attention to detail clearly point to a healthy, if slightly excessive, caution. Yet, the result is a vibrant white wine bursting with fresh passionfruit notes and a delicate floral hint, offering a truly engaging start. Ultimately, its balanced structure and integrated minerality demonstrate a wine that, despite its apparent over-engineering, manages to retain freshness and a pleasant finish – a wine that knows it’s been a little “over-engineered,” but which, in the end, delivers. Perfect with grilled fish or seafood rice.
