**Aards Vineyard** For over 500 years, vines have been planted in the cracks of volcanic rock on this island, just a few metres from the sea. Even earlier, in 1465, Joss Hurtere, Captain Donatary of Pico and Faial, invited Joss Van Aard to the Azores. The Aards (Portuguese for "of the Earth") became one of the island's most important vineyard owners, with some of the finest plots facing the sea at 1os Jeirões. This is one of the front-line plots on the sea at 1os Jeirões. The family sold it in 1923, the Cardozos replanted it in 1924, and it now comes into our hands: 1.45 ha of 96-year-old vines farmed organically, planted in the rock fissures of the Criação Velha lava flow, formed some 1,500 to 2,000 years ago. The vines are trained low to the ground and sheltered by stone walls (*currais*) from the strong, salty Atlantic winds. Distance to the sea: 60 m. **Winemaking:** Hand harvest, sorted on a selection table, direct pressing, cold settling for 12 hours, and spontaneous fermentation. The first press juice is fermented in stainless steel horizontal tanks (60%), and the second press juice in French oak barrels with a minimum of three years of use (40%). Sulphites are added only after fermentation. The wine is aged for 18 months on its lees without bâtonnage. A wine born from the sea, ready to pair with shellfish and seafood dishes (red mullet, sea roe, sea urchin), yet with the density and concentration to work with white meats with caramelised, crispy fat, such as a good roast suckling pig or even pork belly. **Winemaker:** António Maçanita. **Allergen information** Contains sulphites. **SKU:** 107249
