Following a careful selection in the vineyard, the grapes from the Northern vines were transported to the cellar in 20kg boxes. A further selection took place at the sorting table, and after pressing, they were transferred to temperature-controlled stainless steel tanks where they fermented for 7 days. After fermentation completed, the wine remained in contact with the skins for 10 days before a gentle pressing, separating the free run wine from the pressed wine.
