Niepoort Telmo Rodrigues is a very well‑known Spanish winemaker and producer with extensive experience across various Spanish regions. His strong interest in the Douro region, coupled with Niepoort’s willingness to explore different vinification solutions across terroirs, gave birth to Omlet. Derived from old vines, over 60 years old, planted at higher altitudes and facing the sunrise – which typically results in slower, more balanced ripening – the primary varieties are Touriga Franca and Tinta Roriz, with some Sousão and Alicante Bouschet also present. The idea was to reflect Telmo’s vision of winemaking without excessive extraction, aiming for a wine with smooth edges. **Vinification:** 2009 was a very cool year until early August, with a good amount of soil moisture, and the cooler-than‑expected temperatures in the Douro valley led to an extended maturation period. Extremely high temperatures from 12 August triggered a rapid ripening across most of the region, without any grapes shrivelling. The harvest took place in the second week of September to avoid overly high sugar levels in the grapes. Fermentation was carried out in wooden vats with full destemming, with a 25‑day maceration period and no extraction. The wine aged for 18 months in French oak barrels (228 L) and used casks (2000 L). **Food pairing suggestion:** Maronesa beef, steak, wild boar. **Analytical data:** Dry extract (g/dm³): 27.40 | pH: 3.63 | Total acidity (g/dm³): 5.08 | Volatile acidity (g/dm³): 0.75 | Residual sugar (g/dm³): 1.90 | Free SO₂ (mg/dm³): 21 | Total SO₂ (mg/dm³): 76 | Density (g/cm³): 0.9917
