Quinta dos Carvalhais Colheita is an exceptional quality red wine from the Dão, the ultimate embodiment of elegance and richness. A descendant of ancient knowledge, Quinta dos Carvalhais blends experience with innovation to craft wines of exquisite delicacy and the unique personality of the region. Vinification: The grapes were harvested by variety and plot, followed by a rigorous quality selection. After a gentle destem and gentle pressing, the grapes gravity‑drifted into small‑sized stainless‑steel vats with temperature control, where they were vinified variety‑by‑variety. Alcoholic fermentation lasted about eight days at an average temperature of around 27 °C. Maturation: Sixty percent of the wine aged for eight months in used French oak barrels of 225 L, while the remainder matured in stainless‑steel tanks. After barrel ageing it received a slight fining and filtration before bottling, without cold stabilization—potentially allowing sediment to form during bottle ageing.
