This Santos da Casa is a Douro wine that seems to have deliberately slowed down. The extended maceration, punctuated by a bold shot of vínica brandy (77% – quite the statement!), suggests a playful disregard for the typical fermentation pace. The result is a wine of substantial power and concentration, further refined by ageing in oak – a maturation period of 3-4 years is anticipated. The blend of Aragonez, Francesas and Tinta Barocca certainly seems up to the task of containing all that exuberance. A fantastic pairing would be with a perfectly grilled steak.
