Soalheiro REGION Monção e Melgaço, Vinho Verde DOC The Soalheiro Terramatter is a wine completely different from the other Soalheiro family wines. It is, on one hand, a return to the origins and, on the other, a projection into the future. Produced with minimal intervention in viticulture and winemaking, Terramatter is the genuine expression of our territory. With intense colour, expressive aroma and a complex palate, this wine reveals a strong personality and a very distinct profile, for which the early harvest and partial malolactic fermentation in chestnut barrels contribute significantly. Vinification: After a manual harvest, the Alvarinho grapes are subjected to three distinct production processes. One portion ferments in stainless‑steel vats. Another undergoes alcoholic fermentation and malolactic fermentation in traditional chestnut‑wood barrels typical of the Minho region. The third portion ferments in concrete vats where natural bâtonnage is then performed. The final blend is made from the wines of each of these three parts, giving rise to Soalheiro Terramatter. This is then bottled without filtration. We recommend that, before serving the wine, it be gently stirred in the bottle to homogenise the fine lees and thus provide a completely different drinking experience! The evolution of the fine lees and their accentuated acidity make Terramatter an audacious wine that demands a food pairing. We suggest enjoying it with fatty fish, cooked shellfish, smoked meats, lamb, turkey or with roasted vegetables. It pairs well with dishes that include cream sauce or mushrooms, and its flavour and texture beautifully harmonise with Asian cuisine.
