The grape behind Soave in northeast Italy's Veneto, Garganega is a late-ripening white with naturally good acidity and gentle aromatics — almond, white flower, citrus and stone-fruit. The volcanic-soil hills of Soave Classico and the nearby Gambellara produce serious, age-worthy whites; cheap Soave from the lower plain remains commercially dominant but does the grape little justice.
