“This wine, from Adega Mayor, clearly took its time – the hand-harvested grapes, carefully selected using 20kg crates, certainly suggest a deliberate approach. The winemaking process, with the must benefiting from extended contact with skins and seeds at a perfectly controlled 26°C, is promising a significant depth of flavour. Produced in 80,000 bottles, it’s ideally paired with grilled beef or, for the more traditional palate, a beautifully curated selection of Iberian cured meats.”
