Naturally a neutral grape, Chardonnay takes on the character of its site and its winemaking — Chablis is steely and mineral, Meursault rich and nutty, oaked Napa buttery and tropical. Best at home in cool-to-moderate climates on limestone soils, but adaptable almost anywhere.
